Steamed fish parcels...




... this is such a simple recipe, but really tasty, its become one of my favourites!


Ingredients: 10 cherry tomatoes
3 garlic cloves, crushed
20 pitted black olives
juice of 1 lemon
glug of olive oil
2 handfuls of french beans
handful of ripped basil
4 white fish steaks


Put tomatoes, olives, garlic, lemon juice, beans, basil and olive oil in a bowl. Leave for about half an hour to marinade.


Heat oven to 200c.


Cut 4 squares of baking paper and place a quarter of the mixture in the middle, put the fish on top then fold up the baking paper to make a sealed parcel-secure with string and bake for about 20 minutes.


You can serve it to the table in the parcel or tip it out.


I serve mine with baby potatoes.
